Feeding Your Family ; Chicken Mozzarella Wraps

Hey all! I’m at it again. Please enjoy another recipe on me!! 

<> Ingredients <>

  • family pack boneless skinless chicken
  • a block of mozzarella cheese
  • garlic powder
  • basil 
  • a 4-quart casserole dish
  • meat tenderizer 
  • tooth picks

 

Step 1: 

– Rinse your chicken
– cut excess fat and hang off each breast
– tenderize each breast.

Step 2: 

– sprinkle garlic powder and basil on the back side of the chicken 

– cut a 1in, sick off your block of cheese for each breast

– roll chicken over cheese stick and hold in place with a tooth pick.

Step 3:

– cover in foil 
– bake at 325 for 1 hour

Feeding Your Family : Chicken & Broccoli Casserole

Hi All! We are going to be starting a series in this blog called “feeding your family” where I sort of vlog..or plog (picture-log) me preparing my favorite recipes which 90% of the time are done in the crock pot. I avoid the stove top at all costs (: Sadly this idea for the series didnt come to me until halfway though cooking dinner so the beginning portion doesn’t have pictures…enjoy!! 

<>Ingredients<>

  • 2 lbs chicken breast (i used organic cage free) 
  • 4 cups chicken stock
  • 2 cans of broccoli cheddar soup (i used campbell’s)
  • 3 cups uncooked rice (I used 3 uncle ben’s 5 minute bags)
  • 2 steamer/frozen bags of broccoli
  • 4 quart casserole dish

Step 1: 
(in my 2 quart crock pot)

– Remove chicken from packaging and rinse
– Add 4 cups chicken stock to your crock pot
– Place rinse chicken in stock and set on low for 4 hours. 

** Note: If you want to just brown your chicken in a pan that will work too. I take a few extra steps cause its hard to use the stove top from the chair.

Step 2:

– Remove chicken from stock 
– Rinse in cold water and set aside
** I rinse it cause cooking it in the crock pot leaves the fatty film on the chicken
– Strain fat and float (you’ll see what i’m talking about) but save as much of the stock as you can
– Place rice in remaining stock (feel free to add water if needed)
– Set Crock Pot on Low for 30 minutes.

Step 3:

– Place Broccoli in microwave for 5-6 minutes per bag or cook as directed 
– Cut up cooked chicken into chunks 
– Spray casserole dish LIGHTLY with cooking spray and layer the chicken and broccoli

– remove rice after 30 minutes 
– combine 1/2 cup of stock and 1 can of soup

– cover chicken and broccoli in the 2nd can of soup.

– After rice and soup are well mixed place ontop of the dish

– cover dish in foil and bake for 25-30 minutes at 325 degrees.

Meet The Goss’ (:

Ben and I (Brittany) have been together since January 2011. We met trough mutual friends at a Paramore/No Doubt concert in June 2009. I spent the next  year and a half hiding my feelings for him as best I could, not wanting to ruin the friendship. Finally on my 22nd birthday we decided to see what it would be like to be more then just friends. I haven’t looked back since. The beginning of our relationship was a little complicated cause I was currently seeing someone else and I had to tie up loose ends before committing myself to our relationship. Best decision I have ever made. March 8th 2011 we found ourselves pregnant and I was being evicted from my home at the time because my ex had stopped paying his portion of the rent. Luckily Ben’s parents took me and I’ve considered them family ever since. In September 2011 I left Ben in New Jersey to finish school and I moved home to Connecticut to get a little extra help with the end of my pregnancy. I was born with Spastic Diplegia Cerebral Palsy and walk with crutches. Being pregnant I lost what little balance I had and wound up spending the final months in a manual wheelchair. January 15th 2012 at 2:42am I vaginally delivered our beautiful baby girl Alexa.

I couldn’t be happier being a mom although it has come with a ton of challenges. I am basically still wheelchair bound except when we venture out of the house. I spend my days caring for Alexa in the chair. I cook, I clean and I maintain our household solely from a manual chair. This has caused a significant weight gain that I am currently working to take care of. Ben moved up here after he graduated in May 2012. In June we moved into our current home. A two bedroom one bathroom basement apartment which feels more like a house. We live right down the street from my mom and step-dad which has been a huge blessing in the last year and a half. They love having Alexa so close. My mom takes Alexa Monday and Wednesday night cause she takes her to Daycare on Tuesday and Thursday.
